What's For Dinner

Yesterday was the first time I had made a "proper" dinner in weeks. Between moving, unpacking and being exhausted, cooking hasn't been a high priority on my list.

We tried the Cilantro Lime Chicken recipe from Cooking Light, and it was good. I'm in the process of starting a small herb container garden (right now just some mint, cilantro, and chives), so I was excited to use cilantro from my garden (small pleasures, right?).

I did have to modify the recipe a bit - E doesn't like avocado (and we didn't have any in the house), so we just did without the salsa, though I'm sure it would have been REALLY good. :)

Anyway, here's the recipe. Enjoy!

Looks good! I'm on the hunt for anything and everything gluten free right now. We tried re-introducing it back into D's diet, and it did NOT go well...so guess we're sticking with it :( Are your growing your herbs inside or outside? I want to grow some, but I KNOW wildlife around here will eat them (and I don't want to spray them to prevent it), but I don't really have anywhere inside I can safely grow them if they need sunlight (which, I'm assuming would be the case).

Hi Kayla -

Sorry to hear D's not adjusting well to the gluten. Sounds like there are a lot of kiddos out there like her.

My herbs were actually on my windowsill (well my cilantro was anyway). It got a little big (lots of sun). I just got the mint and the chives on Saturday, and have been outside ever since, on our deck.

For what it's worth, we haven't sprayed any of our plants, and they appear to be untouched by any animals.

We have a lot of rabbits, racoons, and deer (and apparently now we have coyotes, too)...I think I fear the bunnies more than anything. I COULD do the deck, thing, though...we have a few high spots that should keep them safe. I want an in-ground garden so badly, though! I have been investigating little garden fences at menards, since we have been prepping for a garden. But I think the bunnies would still make it through :( I don't know, though...we'll see. Did you buy the plants or grow them from seeds? I almost bought a mint plant the other day, but held off for those reasons. ....And we have NO windowsills. Something that I ate more than anything about this house. Even just when it comes to trying to deal with blinds. There is nowhere for them to sit, so they just hang and let a ton of light in. How sesitive are the herbs? I ask, because I am GREAT at killing things.

I bought the plants - we didn't have much time to grow from seeds this year. Hopefully next year, though!

The window above the sink was something I was pretty excited about with our house... that and a lot of natural light, because I've always wanted plants in the kitchen.

We had an herb garden behind our house in Milford, and it was pretty shaded, and it survived well, but it appears that the herbs that we bought require full sun. We neglected our herb garden in Milford, but all of the plants still thrived. So maybe they're pretty hardy? I'm still learning.

Our deck gets a lot of daylight sun, but not a lot of evening sun, so we may end up moving our plants to our dog run (since we have no dog), which should shield them from any animals and still get the proper amount of sun. We'll see how it all works out.

Good luck. My dad's a pretty great gardener, but I'm still a novice who kills things, too. :)

Any problems with your cat getting into them inside? That would be the only other problem I'd think I'd have.
